Pre heat oven to 100 degrees to keep the pancakes warm once they are cooked
Mix all the pancake ingredients together in a large mixing bowl until the smooth
Heat a small amount of olive oil in the frying pan
Pour a thin layer into the pan. Brown on one side then flip over and cook the opposite side.
Put on a plate and the pre-heated oven to keep warm whilst we cook the rest of the dish
Wash and chop the Vegetable Topping
Stir fry the mixture for a couple of minutes in a pan with a small amount of olive oil
Remove the pancakes from the oven and pour the vegetable topping from the pan on top
This recipe will make enough pancakes for around 4 people to have 2 each.
