Sweet Potato, Aubergine & Coriander Soup


Cooking Instructions

I put all the ingredients in a pan and heat it until it starts to boil, and then turn the heat down and simmer until the potatoes are cooked. You don't want to overcook it as that will destroy the goodness

Then I liguidised half of the ingredients, but only half to keep the consistency course

Allow to cool a little (so as not to burn your mouth) and add some natural greek yoghurt to the top
